Cream Roll & Crispy Ties

Cream Rolls

Ingredients:

Sheets of puff pastry or flaky pastry (I used store bought puff pastry)
1 egg white – beaten
Butter – for greasing
4 tbsp strawberry or raspberry jams
125 ml whipped cream
Icing sugar – for dusting
Cream horn moulds

Directions:

Cut pastry into 2.5 cm wide strips. Brush lightly with egg white. Lightly grease cream horn moulds if using normal moulds. There is no need to grease the moulds if you are using non stick moulds.
With the damp side of the pastry facing the mould, turn strips around the greased mould, starting from the pointy tip of the mould. Make sure that the strips overlap when you twist this around to the top. Gently squeeze the tip of the pastry to seal in the bottom.
Brush the outside now with egg white and place on a greased baking tray.
Bake in a preheated 220°C oven for 8 to 10 mins. Allow to cool on racks.
Place 1 tsp jam inside the cream horn and fill with the beaten cream.

To Make the Cream:

Pour whipping cream and sugar into a stand mixer bowl fitted with a whisk attachment.
Mix on high speed until stiff peaks form.
Fill a pastry bag with the whipped cream.
Pipe the cream into the cooled horns.

Potato Coated Fried Sandwich

Ingredients: 

6 bread Slices cut into 2 pieces
3-4 small potato boiled, mashed
1 onion chopped
2 green chilis chopped
red chili flakes to taste
black pepper to taste (coarsely ground)
1/2 tsp cumin seed
1/2 tsp soy sauce
1/2 tsp hot chili sauce
Salt to taste
2 egg beaten seasoned with salt & black pepper to taste.

Directions:

Mix all the above ingredients in the mashed potato and spread the mixture just on one side of the bread, dip it carefully in the beaten egg and fry in oil till done.
Serve with mint/coriander chutney, tomato sauce or any other sauce of your choice.

Cheese Sandwich

Cheese Sandwich

Ingredients:

- Cooked Chicken * Boil the chicken with water. Add salt, Black pepper. When boiled, take out the chicken & shred to small pieces...
- Finely chopped cabbage
- Grated cheese
- Mayonnaise
- salt
- Black Pepper

Directions:

Combine chicken and all remaining ingredients, mix well. Take one piece of bread, spread some chicken mixture on it. Cover with second piece of bread.. Cut each sandwich into two parts.
Put oil in a frying pan, Dip the sandwich in the egg mixture to wet both sides and fry them in a hot pan. When one side turns golden brown, then turn the sandwich. Wait till the other side turns golden brown. Now pour cheese on top.. warm up in Microwave. (About 30 sec.)

Halwa Puri ~ Desi Breakfast

Ingredients:

Whole Wheat Flour 2 cups
Salt to taste
Vegetable Oil ½ tbsp.

Directions:

Slowly add about 3/4 cup warm water to the flour, just enough to form a firm dough, and knead until smooth. Cover, and let it rest at for least 1/2 hour, and knead again briefly after 1-2 hour. If resting more than 1 hour, punch and knead dough again before rolling out.
Divide dough into small balls about the size of golf-balls, and roll out into 6" rounds on an oiled board. Heat vegetable oil in a wok or saucepan. Add a little salt to the oil to keep it from smoking. Fry the puri one at a time, holding them under the oil on the first side until they puff. Turn and fry until light brown and drain.

Halwa

Ingredients:

Semolina (Sooji) 1 cup
Dry Fruits (optional - according to taste)
Cardamom Pods (Choti Ilaichi ) ..5-6
Almonds (Badaam) (slivered)……(according to taste)
Cashewnuts (Kaaju) (chopped)… (according to taste)
Sugar 1 cup
Salt according to taste
Yellow Food Color (optional) (mixed with a little bit of water)… A pinch
Water 2 cups
Clarified Butter (Ghee) or Cooking Oil ..¼ cup

Directions:

Heat clarified butter or cooking oil in a small pot until well hot. Add cardamom and semolina and roast the semolina on very low heat until it turns light brown and gives a nice aroma.
Add food color water and sugar and stir. Add salt, dry fruits, and nuts. Mix and cover on low heat and let it simmer until the water absorbs (approximately 5 to 10 minutes.) Remove from heat, mix, and serve.


Aloo Cholay

Ingredients:

Chick Peas/Garbanzo Beans(washed)225 grams or 8 ounces
Fresh Root Ginger(peeled & grated) ½" piece
Potato (peeled & cut into 4 cm - 1 ½" dice) 1 large
Ground Turmeric (Pisi Haldi) 1 tsp
Red Chilli Powder (Pisi Lal Mirch) ½ tsp
fresh Green Chillies (slit lenghthwise into halves) (de-seeded for a mild flavor) 2
Clarified Butter (Ghee) 30 grams or 1 ounce
Onion (finely chopped) 1 large
Salt 1 ¼ tsp.
Garam Masala Powder ½ tsp.
Fresh Mint (Podina) (freshly chopped)1 tsp.

Directions:

Soak the chick peas overnight in plenty of cold water or use ready cooked - canned chick peas. Rinse several times and drain well.
Place the chick peas, water and ginger in a large saucepan over a high heat, bring to the boil, cover the pan and simmer for 1-1 1/2 hours or until the chick peas are tender.
Add the potato, cumin, turmeric, chilli powder and green chillies and mint, if you are using dried. Return to the boil, cover the pan and simmer for a further 15-20 minutes, until the potatoes are tender.
Melt the ghee over a medium heat and fry the oinion until they are lightly browned. Stir them into chick peas with salt and garam masala powder .
Remove the pan from the heat and stir in the lemon juice and fresh mint.

Egg & Potato Bhujia

Ingredients:

Eggs : 3
Potato : 2 (Large) Cut into small pieces
Onion : 2 (Finely chopped)
Green Chillies : 3 (Chopped)
Tomato : 1 (diced)
Turmeric powder : 1/2 tea spoon
Red chilly powder : 2 tea spoons
Salt : as per taste
Oil : 2 table spoon

Directions:

Beat the eggs in a bowl with egg beater and keep aside.
Heat oil in a karahi/wok add potato pieces and fry for 5 minutes till potatoes turn into light golden color.
Add chopped onions, green chillies, tomato and fry for 2 more minutes.
Add turmeric powder, chilly powder, slat as per taste and stir fry for 2 minutes.
Pour the beaten eggs over it and mix well.
Stir fry on slow flame for 5 minutes or till it done.

Cheesy Chilly Toasties with Ginger Cardamom Tea

Ingredients:

Bread - 2 slices
Cheese - 3 tbsp (I used mozzarella)
Green Chillies - 2 (thin long variety)
Green Capsicum - 2 tbsp cubed
Pepper powder - 1/2 tsp
Italian Seasoning 1/2 tsp(optional)
Salt - to taste

Directions:

1.Cut green chillies finely, cube the capsicum - set aside. Take grate cheese in a bowl and mix green chillies and capsicum with it.Add pepper and salt.
2.Take the bread slice and apply the cheese chilli mixture. Sprinkle seasoning. Meanwhile preheat oven at 180 deg C for 10mins and bake it at the same temperature for 3-5mins until cheese melts completely the turn the knob to grill mode and grill it for 3mins till the cheese bubbles and starts browning.
Cut diagonally and serve hot with tomato sauce & ginger cardamom tea.

Notes :

You can add colour capsicums like yellow and red to make the toast colorful or desed the tomatoes and add it.
If making in stove top just toast the bread slightly till crisp in dosa tawa then spread the cheese chilli mixture and place it on the tawa again with cheese side up...Do not flip..Cook till cheese melts and serve hot. The browning of cheese will be missing in the stove stop method but it will still taste good.
You can garnish with coriander leaves finally on top of the cheese mixture.
I used mozzarella cheese, you can even use cheddar cheese too.
Use long green chillies as it is less spicy.


For Ginger Cardamom Tea

Ingredients:

Fresh Milk - 1 cup
Tea - 1.5 tsp heaped
Sugar - 2 tsp(adjust according to your taste)
Cardamom - 2
Ginger - 1/2 inch piece

Directions:

1.Peel the skin and chop the ginger roughly. Then crush ginger and cardamom together in a hand mortar and pestle. Set aside. Boil milk until its frothy.
2.Then add sugar, give a quick stir for the sugar to dissolve. Then add crushed ginger cardamom, tea powder and simmer for 3-5 mins.
3.Once it starts to boil and you get the required tea strongness and color, switch it off. Filter using a tea strainer and serve hot.
You can use your preferred tea brand.
You can also add sugar at the final stage after switching it off.
Adjust tea powder and sugar according to your taste.

Naan Cholay

Sunday's most favorite breakfast 


For Naan

Ingredients:

2 cups Plain flour/self raising flour (i mixed both)
2 Boiled & Mashed potato
1 tbsp yeast
Salt to taste
1 tsp sugar
3 tbsp Yogurt
1 tbsp softened butter
1/4 tsp baking powder
Water for kneading
Ghee or melted butter to brush ( Optional.. but i used low fat butter& believe me the taste was yummilisious )

Directions:

Put the sugar, yeast and water in a small bowl and mix until the yeast is dissolved. Let stand until it gets foamy, about 10 minutes. But if you are using an instant yeast then add as it is.
Now mix together Flour,Yeast,salt,Sugar,baking powder ,potato,yogurt ,butter, and water as u required to knead a soft dough ..in a big bowl
Dump in all dry ingredients if needed add more water or if sticky add flour and make a soft dough and cover with plastic or damp cloth. keep aside until double in size .
Now divide into 3-4 equal size balls or as u need to make naan.Flatten them don't make too thin.Let them rise for 10 min then grill them on high heat from both sides until done or make it on tawa like roti or paratha.At the end bush with butter & serve with any curry or with aloo chana masala in breakfast.

For Aloo Chanay

Khatta Aalu Chana Masala (Sour potato and garbanzo curry)

Ingredients:

1 can chickpeas (garbanzo) drained (14 oz can)
2 medium potatoes peeled and cubed
1 medium onion sliced
2 tablespoons oil
1/2 cup juice from small lime sized tamarind
1/2 teaspoon each of salt, chilly powder, turmeric
2 green chillies slit

Directions:

In a pressure cooked heat oil and fry the onions till they become translucent. Add green chillies and fry for a couple of minutes. Add the rest of the ingredients and cook for two whistles. After the steam escapes open the cooker and simmer till the gravy becomes thick. Garnish with cilantro and serve hot with Kalonji roti or Roghni Roti/Naan.

Recipe Ingredients

  • Wheat flour 2 cups
  • Flour 1 cup
  • Salt ½ tsp
  • Sugar 1 tsp
  • Mint finely chopped 4 to 5 tbsp
  • Ghee as required
  • Water to knead as required

Recipe Method

  1. Sieve flour and salt add water gradually and knead, mix 2 tbsp ghee, mint and knead well, divide into 8 equal portions make into balls, roll quarter plate size, apply little ghee, cut into cone as shown, heat tawa apply little ghee to the surface, place paratha for the tawa, cook for 2 to 3 minutes. Serve hot.

Spinach with Egg

This recipe is created and inspired by a pesheweri  village simple life . I remember visiting my village first of all when we reach there they catch the chicken and send it to cut and clean and  soak the  rice and start cooking tea . and spinach which they cook for their self adds eggs and home made butter to it for special touch . believe me  with a cold glass of home made butter milk which they called shumly and flat corn bread   is all you want .
So here you go a wonderful simple  spinach  from  my village to you.


Spinach with Egg.
Ingredients:
Fresh baby spinach 1 pound clean and cut.
3 tbsp canola oil.
4 cloves of garlic chopped
1 green whole chili
1/2 medium size onion chopped
1/4 tsp red chili flakes.
1/2 tsp cumin seeds
Salt and pepper
2 egg white 1 egg yolk

Method:


Steam the spinach drain the liquid if any and keep aside.

In frying pan, combine oil onion and cumin seeds and cook for 2 minutes on medium heat,


Add garlic chili and stir for 1 minute then add spinach and stir-fry for 3 to 4 minutes or until the spinach get tender.

 Add Salt and pepper and mix.

At the time when you serve spinach add egg stir and serve with corn bread and lassie

Yeast Dough Paratha

 YEAST DOUGH PARATHA.
Soft milt in your mouth this recipe is easy and tasty. if you don’t like oil just cook it like roti.

 Ingredients

1 cup all purpose flour
1/2-cup whole-wheat flour
3/4-cup water
1/2 tsp yeast
1/4 tsp salt
Oil for frying

METHOD
IN a large mixing bowl, combine flour, yeast, salt, and add want little by little and mix with a wooden spoon  to form dough.

Knead the dough. For 10 minutes cover and let it rise.

You can knead the dough in the night and put in refrigerator and roll it in the morning

Then fry them on both sides until golden, serve warm.

Note.

For this yeast paratha, you can get 1 dough ball of everyday naan, and fry it for the first time

Then make more if you like.

Preparation  time:10 minutes plus 1 hour
Cooking time:15
Serves 4
