Katlama Special


FIRST PREPARE PORI ATTA AS USUAL WITH BIT OF SALT OIL AND WATER KNEAD IT AND LEAVE FOR 15 to 20 MINS
1 CUP OF BESAN KA ATTA OR GRAM FLOUR
1 tbsp crushed chilli pwd
2 tbsp crushed dry dhunya pwd
2 tbsp zeera
1 tsp ajwaien seeds
2 tbsp red tomato paste
2 tbsp anaar dana
2 tbsp mango pwd
1/4 tsp red color
2 tbsp lemon juice
hara dhunya can be used in last its option
1 tsp salt
Make besan ka mixture on thick side with some water adding all the spices mentioned above.Except Anaar dana and hara dhunya which you sprinkle in the last before frying. Press anaar dana with your finger so it gets stick on the paste otherwise they will fall away away during frying !!
Now take a big pera of the dough and roll big round shape of roti for poori.Once the desired size is done just spread besan ka mixture on the whole roti and spread hara dhunya and anardana pieces.Prepare your karahi in advance with oil for deep frying.Once the poori is all done push the poori for frying with some
flat turner or kafgir to lift it up,Its bit tricky u can do it.It may be bit crooked in the beginning but dont be scared u will managed it after 1 or 2 pooris. The besan side should be top side and the bottom of the pori is plain. Fry for 4 to 5 mins each side on medium heat till they are crispy and golden.When you flip or turn the besan side in oil don't be scared the besan will not fall its half cooked now and sticked to the poori.Now both sides are done,Bring it out and keep on a large platter.U dont have to do v big pooris try to roll the size of your big karahi or whatever u can manage easily.The Commercially done extra large pooris are big in size because they have a v big karahis and not the domestic one,the poori is the same only but its a small size !

Cut and serve your pooris with yoghurt raita or mix chatpati sabzi goes v well !!

U can cook this once in a while for special occasion cause its deep fry.Its different and v tasty.

NB--Katlama traditionaly is a celebration bread sell during Mela in villages.Basically its Melay ki roti.When served given into pieces.Its colorful and red or orange in color v typical village colors !!
